A wine and cheese fanatic, our resident cheesemaker Barbara Power has an extensive and impressive resume, she draws on her career experience as a microbiologist to experiment with and cultivate unique and delicious flavour profiles.
All our cheese stock is made exclusively handmade, using local milk. The excellent quality of the produce is essential to the manufacture of our quality cheeses.

"As a skilled microbiologist with an interest in food and wine, it was a natural progression into cheese. Understanding the variables that can be altered to change the moisture or dryness and how to change the paste from chalky to elastic, the possibilities are endless. My cheese cave is full of newexperiments."
Variety of Styles
We make all sorts of cheese ranging from fresh cheese through to mould covered cheese (blue and white) and other styles like Colby, Gouda and Swiss. There is the occasional cloth wrapped traditional aged Cheddar and Parmesan. Our current stock showcase is primarily blue and white mould cheeses, however I am always willing to experiment with new styles and flavours to add to my stock.
